Low Carb Mashed Cauliflower Recipe
INGREDIENTS
4 cups cauliflower florets
1 ounce butter
1 fluid ounce half-and-half
Salt and pepper to taste
DIRECTIONS
Steam or microwave the cauliflower until soft. Puree in a food processor, adding the rest of the ingredients.
I think this recipe makes a good low carb mashed potatoes substitute and I love to make it with steak!
