Low Carb Greek Omelet Recipe
LOW CARB INGREDIENTS:
3 EGGS
¼ CUP HEAVY CREAM
¼ CUP DICED RED ONION
¼ CUP BABY SPINACH (REMOVE THE STEAMS)
4 to 6 CUT AND PITTED KALAMATA OLIVES
½ CUP FETA CHEESE
¼ CUP DICE TOMATOES
1 TABLESPOON BUTTER
SALT& PEPPER TO TASTE
Whisk together eggs heavy cream. Over medium heat melt butter than add the low carb egg mixture to the pan. Add onions, Spinach, olives, tomatoes and ½ of feta all over egg mixture. Use the rest of the feta inside the low carb Greek omelet before folding and on top after folding. Add salt and pepper to taste.
